Grilled lobster with garlic butter

Ceviche is a celebration of freshness.

When i cook lobster, I always think of the ocean in los cabos, generous, bold, and full of life.

This recipe is about respecting the ingredient and letting it shine with just the right balance of butter, garlic, and heat.

STEPS:

  1. Start by preparing the lobster tails, splitting them carefully down the center. This makes them easier to grill evenly while keeping the meat tender and juicy.


  2. Melt butter slowly in a small pan with finely chopped garlic. Let it cook gently so the butter absorbs the aroma without burning.


  3. Preheat the grill until it’s very hot. Brush the lobster tails with a first layer of garlic butter, then place them shell side down.


  4. Grill for about 6–8 minutes, basting with more butter as they cook. The meat should turn opaque and slightly golden at the edges.


  5. Finish with a final brush of butter, a sprinkle of sea salt, and a squeeze of fresh lime. Serve immediately for maximum flavor.
